Our family has always loved Taco Night and this is our go to recipe for the best tacos ever!
I’ve been thinking about my mama a lot lately, this week I am headed home to lay her ashes to rest. She started a family tradition of tacos and cheesecake for special occasions and it’s been our thing for as long as I can remember. Of course, the occasion is flexible and “It’s Wednesday!” counts. You wouldn’t think the two things would go together and I’ve gotten plenty of strange looks when I talk about it but y’all it’s totally a thing, at least for us. The night after her service, we made tacos and served cheesecake (a store bought one, which would have horrified her but was the best we could do on short notice). She would have loved it and we got to sit around and share memories of other taco and cheesecake nights. I thought this would be the perfect time to share her recipe for taco night, everyone always raved that she made the best tacos they’d ever had and it was one of the first things I made her teach me to cook.
The recipe below has the base spice mixture that we start with. I adjust it with a little of this or that as the meat is cooking to get it just right but trying to measure that is nearly impossible. So, you can stick with the base or mess around with it a little until it’s right for your family.
Once the ground beef has started browning a bit with the base spice mixture, I take a big ole sniff to see what I need to start adding. My dad caught me doing it the night after the service and thought it was weird but, that’s just how I do it. When the meat is done, I drain off the fat and set it aside to get started on the tortillas.
This is the part that gets these tacos such rave reviews. I add my tortillas to the heated oil one at a time until they crisp up, Joe prefers flour tortillas and they puff up a bit in the oil, then I fold them in half and lay them on a paper towel.
Once they are on the towel, I sprinkle a little bit of parmesan cheese on the inside for a bit of hidden flavor. These disappear almost faster than you can fry them and get loaded with meat, cheese and more taco filling. We tend to load ours up so they make a total mess, you’ll want to make sure there are plenty of napkins around for clean up!
Y’all these are the best tacos I’ve ever had and you’ll definitely want to try them for your next taco night.
- 1lb Ground Beef
- 3/4 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1/2 tsp Cumin
- 1/4 tsp Chili Powder
- Salt and Pepper, to taste
- Oil for Frying
- Corn or Flour Tortillas
- Parmesan Cheese
- Add oil to skillet and start heating.
- Break up the ground beef in a skillet and add the spice. Brown the meat and drain off excess fat.
- Add individual tortilla to heated oil for a short time until crispy but still flexible. Remove from oil to a plate covered with paper towel to drain excess oil. Sprinkle parmesan cheese on the inside of the tortilla.
- Add meat to tortilla and add your favorite taco toppings.
- Grab lots of napkins and enjoy!
