I’m now officially a fan of making this Bacon Ranch Cheese Ball for any occasion…or for none at all!
Bacon Ranch Cheese Ball
This post was originally supposed to be about filled cookie cups but several incidents led to a change in plans. This first is that the cookie cups didn’t cooperate very well, more than half refused to come out of the pan without breaking into a million pieces. I only had a dozen that were in good enough shape for me to attempt to fill them so I left them on the counter long enough to go to the bathroom. When I came back to start the filling, my dog had his front paws on the counter and was gleefully chowing down. Y’all, my dog seriously ate my homework…or work…or post I can’t decided the best term for it. I was more than mad, so I dumped the remaining cookies to guarantee that there were no dog germs and hosed down the kitchen with more cleaning products than I would normally use in a month.
The next thing that happened was my food assignment for our family gathering that weekend was increased by one cheese ball. I’ve never made one before, actually I hadn’t made anything on my “to bring” food list. My protests were met with “Aren’t you supposed to be a food blogger? Figure it out!”. I’m totally paraphrasing that because no one would say that to me, at least out loud, but you get the point.
So, I hit my Pinterest feed for inspiration and saw this Bacon Cheese Ball from Chocolate Moosey. Here is the really interest part, the cookie recipe that went so badly was also from her site! Sometimes things happen for a reason, right? My dog tried to convey that idea with sad looks and an air of extreme suffering which did not, at all, get him off the hook.
This was a nice easy introduction to the art of making a cheese ball. I decided that I wanted to double down on the bacon and put it inside the cheese mixture too. I cut my bacon into strips before I cook it when I need pieces, it makes my life easier and cooks much faster.
I got it cooked and set it aside while I whipped up the softened cream cheese and added the ranch mix.
When it was all combined , I added the cheese and bacon. I plopped the final mixture on a piece of plastic with foil underneath it and manhandled it until it looked, more or less, like a ball. I wrapped the plastic wrap around it and wrapped the foil around the plastic wrapped ball.
I threw it in the fridge overnight to set and tried to ignore it calling to me all night long. When we were close to getting ready to go, I cooked the rest of my bacon and sliced the green onions for the outer coating.
I dumped the cheese ball in and rolled it around a bunch. I think I maybe should have taken it out of the fridge a few minutes before to soften so it might stick a little more evenly. I squished all of it on there eventually, threw it on a plate with some crackers and wandered out the door.
I was really impressed with how good this tasted. I loved the ranch flavor with the cheddar and bacon, the green onions added something a little extra that made it all work together so well. I spent entirely too much time hanging out at the table next to my cheese ball and I may have accidentally elbowed one of my brothers-in-law when he got to close to the plate. I got to eat all I wanted (Ok, maybe more than I wanted) of this Bacon Ranch Cheese Ball. I think this is going to be my new favorite thing to bring to gatherings so I have an excuse to make it again and again. Of course, I’m kind of thinking that with the bacon I might actually be able to consider it dinner.
Y’all try this, you won’t be disappointed…unless you have as little self control as I do and eat the whole thing!
- 1 8oz Pkg Cream Cheese, softened
- 2 Tbsp Ranch Dressing Mix
- 1 1/2 Cup Cheddar Cheese
- 5 Strips Bacon, cooked and chopped
- 5 Strips Bacon, cooked and chopped
- 2-3 Green Onions, sliced
- Combine cream cheese, ranch dressing mix, cheese and bacon.
- Place cream cheese mixture on a sheet of plastic wrap and shape into a ball.
- Refrigerate overnight and remove just prior to serving.
- Combine bacon and green onions and roll cream cheese ball in mixture.
- Serve with crackers of choice.
